Rawia Bishara
Rawia Bishara is a Palestinian-American who opened a Middle Eastern restaurant, Tanoreen in Brooklyn in 1988. As chef of the highly rated restaurant and through her cookbooks she has aimed to recreate the flavours of her mother’s cooking and of the place of her origin, Nazareth. She claims to reflect the Middle East’s rich gastronomic culture and her attention to styles of cooking serves to shed light on Palestine’s cooking traditions and culture in general.
